Our ancient olive grove is located up on the hills behind Villa Buonvisi with as many as 1200 olive trees. We start the harvest in October and when the olives are starting to shift color from green to back, it is a great time to harvest. We harvest by hand according to traditional methods where nets are placed underneath the trees the olives are gently raked down from the trees. 

The olives are pressed with the highest standard, extra virgin, cold extracted and non filtered.

The olive oil, with an intense green color, has a strong, fresh and peppery flavor.
